This study investigates the effects of different thermal and non-thermal processing techniques on the nutritional, functional, and safety characteristics of white cabbage powder, aiming to identify optimal methods for producing a nutrient-rich and safe product.The study found that microwave treatment was particularly effective in reducing the levels of toxicants, including alkaloids, oxalates, tannins, and phytates, in white cabbage powder.
